Those endless lectures you had to listen too as a kid about how healthy and wonderful vegetables are.
Vegetables that were boiled to death with hardly any salt come to mind?
No doubt it became a real buzz-kill.
But the good news is
If you know how to prepare and cook them, vegetables can be a main meal in its self.
In these veg balls, you’ll find broccoli, pak choi and spinach.
Now I eat a lot of veg, and I mean A LOT! And I never get bored of them.

Best part is that you don’t have to figure this out by yourself. I have numerous veggie recipe ideas that you’ll enjoy eating.
Crispy and Gooey
This gluten free cheese filled veg dough balls recipe is one I make regularly.
The psyllium husks and flaxseeds give the balls a crispy outer coating while the gloriously gooey cheese inside is just waiting to ooze out.
You can leave out the cheese if you want, they’ll still be as tasty.
As for flavour, spice is everything.
The slightly bitter, spicy pungency of cumin seeds add a wonderful taste of Asia, while the smoked paprika adds a subtle smoky background.
The secret to these veg dough balls is the lemon pepper. I use Steenbergs organic lemon pepper.
Lemon pepper is one of my most favourite spice. It’s immediately detectable in this recipe but nowhere near overpowering.
The vibrant zing of freshly cracked black pepper and the bittersweet tartness of lemons, provide an alluring contrast of flavours which perks up these dough balls nicely.
Let’s not forget about nutrition here either.
These are filled with potassium, magnesium, iron and other important vitamins and minerals.
This is a GREAT way of getting a load of veg down you at once.
Great Balls Of Flavour
Try your chance on this gluten free cheese filled veg dough balls recipe.

- 70 g Coconut Flour
- Dairy Free or normal cheese of your choice
- 4 Tsp Pysillium Husk
- 4 Tsp Ground Flaxseeds
- 4 Tsp Boiling Water
- 1/2 Tsp Baking Powder
- 40 g Pak Choi
- 30 g Broccoli
- 25 g Spinach
- 2 Large Eggs
- Sprig of Rosemary
- 1 Tsp Pink Himalayan Salt
- 1/4 Tsp Ground Ginger
- 1/8 Tsp Cayenne Pepper
- 1/2 Tsp Lemon Pepper
- 1 Tsp Smoked Paprika
- 1 Tbsp Oregano
- A good pinch of Cumin Seeds
- 1/4 Tsp Ground Fennel
Put all the veg, spices, herbs, eggs and salt in a blender and blitz until smooth and runny.
In a bowl add the coconut flour, psyllium husks, flaxseeds and baking powder.
Pour in your blitz super greens mixture and mix.
Add the boiling water, mix well and leave for 10 minutes.
Grab some of your dough mixture and start to form a ball.
Get a small cube of cheese and stuff it in the middle and continue to roll it in your hands.
Using a flat baking sheet with baking paper, bake in the oven on 200c for 15 minutes.
They should be OOZING by now so eat them when they're nice and warm.
