Blitz the coconut sugar up in a blender until you get a fine dust.
Melt the cacao butter on a low heat slowly in a pan.
Add the cacao powder and vanilla and mix.
Sieve the coconut sugar in and mix until smooth.
Leave to cool slightly then add the bee pollen.
Pour into your moulds and sprinkle some bee pollen on top.
Pop in the fridge or freezer until set (be patient, they will be ready soon).
