Gluten Free Cardamom & Banana Pancakes Recipe

Ingredients

  • 1 Med-Large Banana
  • 20 g Coconut Flour
  • 1 Egg
  • 2 Cardamom Pods de-husked and ground
  • 4 tsp Coconut Sugar
  • 1 tsp Baking powder
  • Good Pinch of Cinnamon

Instructions

  1. Mash the banana up in a bowl.
  2. Add in the egg, baking powder, cinnamon, coconut sugar, coconut flour and ground cardamom.
  3. Using an electric mixer, beat until smooth.
  4. Add some oil/butter of choice to a hot frying pan and pour some pancake mixture into the pan.
  5. Turn the heat down to a medium heat and allow to cook until lightly browned.
  6. Flip and cook the other side and repeat with the rest of the mixture.

  1. Stack them high on a plate and drowned them in a LOAD of luscious sweet honey, maple syrup or agave nectar.
